Brown meat in a saucepan on medium high, adding onions and celery half way through
Add mushrooms, peppers and garlic to finish of the meat
Reduce heat to medium, and add the chili powder, cumin, oregano, salt, and cayenne pepper at the end of the cooking of the meat. Mix well, and simmer for about 4-5 minutes
Mix in the tomato juice, crushed and diced tomatoes and kidney beans
Simmer at least 1 hour. More if you have time
You can use pinto beans as well. Combine the beans how you like.
Rinse the chicken pieces in cold water and pat dry. Place the chicken in a large, resealable zip-top bag and pour in the marinade. Toss the chicken inside the bag to cover evenly with the marinade and refrigerate.
