Chili

Ingredients

  • 2 lb ground beef
  • 2 lg onions
  • 3/4 bunch celery (8 stalks)
  • 8 oz container of mushrooms
  • 2 lg red peppers
  • 5 cloves garlic
  • 5 Tbsp chili powder
  • 3 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt
  • 1/4 tsp cayenne pepper
  • 4 Cups Tomato juice
  • 2 - 28 oz can of crushed tomatoes
  • 1 - 28 oz can diced tomatoes
  • 2 cans kidney beans

Steps

  1. Brown meat in a saucepan on medium high, adding onions and celery half way through
  2. Add mushrooms, peppers and garlic to finish of the meat
  3. Reduce heat to medium, and add the chili powder, cumin, oregano, salt, and cayenne pepper at the end of the cooking of the meat. Mix well, and simmer for about 4-5 minutes
  4. Mix in the tomato juice, crushed and diced tomatoes and kidney beans
  5. Simmer at least 1 hour. More if you have time

Notes

  • You can use pinto beans as well. Combine the beans how you like.
